Ingredients

PASTA CARBONARA WITH PEAS

  • 8 oz. (250 g) bow-tie pasta
  • 1 tbsp. (15 mL) olive oil
  • 1 small onion, finely chopped (about 3/4 cup (177 mL))
  • 1 cup (250 mL) heavy cream
  • 1/3 cup (80 mL) chicken broth
  • 1 tbsp. (15 mL) lemon juice
  • 1 can (398 mL) Green Giant* canned Summer Sweet Peas, rinsed and drained from liquid
  • 1/2 cup (125 mL) shredded Parmesan cheese
  • 1/4 cup (60 mL) crumbled cooked bacon

Directions

Cook pasta according to package directions; drain and keep warm.

In 12-inch skillet, heat oil over medium-high heat until hot. Add onions and cook 3 minutes, stirring frequently, or until tender. Add cream and broth and heat to a boil. Reduce heat to low and simmer about 6 minutes or until slightly reduced, stirring occasionally. Stir in lemon juice.

Gently fold in Green Giant* peas. Stir cream mixture, cheese and bacon into cooked pasta. Serve hot. Garnish with additional shredded Parmesan cheese or chopped fresh parsley, if desired.
