1 pkg. (340 g) Green Giant* frozen Cauliflower Medley Riced Veggies, thawed
1 small red onion, peeled and quartered
½ cup (125 mL) pitted black olives
1 tbsp (15 mL) capers
½ cup (125 mL) cherry tomatoes, halved
4 (450 g) haddock fillets *if frozen fully thaw
2 tbsp (30 mL) Mrs. Dash® Lemon Pepper Seasoning
1 lemon sliced and quartered
3 tbsp (45 mL) olive oil
1-cup (250 mL) fresh oregano leaves
Preheat oven to 425°F. Line a baking tray with parchment paper.
Add to the baking tray Green Giant* frozen Cauliflower Medley Riced Veggies, onion, olives, capers and tomatoes. Gently stir together and evenly spread over baking tray.
Evenly coat fillets with Mrs. Dash® Lemon Pepper Seasoning. Transfer fish to baking tray. Nestle fillets and lemon wedges in amongst vegetable mix.
Drizzle everything with olive oil and bake for 25 minutes until fish is flaky. Top with fresh oregano leaves and serve warm with a roasted lemon wedge.
