1 cup (250 mL) Green Giant* Frozen Mixed Vegetables
3 large zucchinis
1 tbsp (15 mL) olive oil
¼ cup (60 mL) red onion, finely diced
2 cloves garlic, minced
½ cup (125 mL) baby button mushrooms, sliced
¼ cup (60 mL) roasted red pepper, finely chopped
½ cup (125 mL) tomato puree
3 tbsp (45 mL) fresh oregano, finely chopped
2 tbsp (30 mL) Mrs. Dash® Original Seasoning
1 cup (250 mL) Canadian White Cheddar cheese, grated
½ cup (125 mL) fresh basil leaves, chopped
Preheat oven to 350°F. Line a baking tray with parchment paper. In a small bowl stir together grated cheese and 1 tbsp. (15 mL) of oregano.
Slice zucchini’s in half horizontally and scoop out zucchini center, leaving a ¼ inch (1 cm) boarder near skin. Finely chop and reserve meat in a bowl. Transfer zucchinis to baking tray.
In a large skillet over medium heat add oil, onion and garlic, sauté 2 minutes. Stir in Green Giant* Frozen Mixed Vegetables, mushrooms, red pepper, tomato puree, 2 tbsp. (30 mL) oregano, 1 tbsp. (15 mL) Mrs. Dash® Original Seasoning and reserved zucchini meat. Cook for 6 minutes and remove from heat.
Evenly distribute and fill zucchinis with vegetable mixture and sprinkle with oregano, cheese and 1 tbsp (15 mL) Mrs. Dash® Original Seasoning. Bake for 20 minutes. Sprinkle with basil and serve warm.
