Mediterranean Riced Cauliflower Recipe

Ingredients

Mediterranean Riced Cauliflower

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 (340g) package Green Giant* Riced Veggies Cauliflower, thawed and drained
  • 2 to 3 tsp Mrs. Dash* Original Blend
  • 1/2 cup chopped artichoke hearts
  • 1/3 cup chopped sundried tomatoes
  • 2 tbsp chopped fresh oregano
  • 2 tbsp crumbled feta cheese

Directions

Heat olive oil in large non-stick skillet over medium-high heat and cook onion 4 minutes or until softened and beginning to brown. Add garlic and cook 1 minute.

Stir in Green Giant* Riced Cauliflower and cook 4 minutes, stirring occasionally, or until vegetables are tender. Stir artichoke hearts, sundried tomatoes and cook 2 minutes.

Stir in oregano and top with feta cheese.

Sprinkle with additional Mrs. Dash*, if desired.
