1 bag (400 g) Green Giant* frozen Valley Selections* Italian Blend, thawed and chopped
6 ears of Green Giant* frozen Corn on the Cob, thawed
¼ cup (60 ml) olive oil
2 tbsp. (30 ml) fresh parsley, chopped plus leaves for garnish
1 tbsp. (15 ml) lime juice
Salt and pepper to taste
Preheat oven to 450°F. Line a baking tray with parchment paper.
Place vegetables and corn on the prepared baking tray. Toss with olive oil and season with salt and pepper. Roast in the oven for 25 minutes. Stir in chopped parsley.
In a small food processor, blend avocados with lime juice until smooth.
Serve roasted corn with avocado spread and roasted vegetables. Garnish with chopped parsley.
