6 Green Giant* frozen Corn on the Cob
¼ cup (60 ml) cotija cheese or feta, crumbled
1 tbsp. (15 ml) chili powder, plus extra for sprinkling
2 tbsp. (30 ml) mayonnaise
2 tbsp. (30 ml) lime juice
2 tbsp. (30 ml) sour cream
Cilantro for garnish
Lime wedges for serving
Boil corn for 5 minutes. Preheat a grill pan and brush corn with 1 tbsp. of sesame oil. Grill on high heat until corn is charred.
In small bowl stir together chili powder, mayonnaise and 1 tbsp. lime juice.
In a small bowl stir together 1 tbsp. lime juice and sour cream.
Brush corn with chili mayonnaise, sprinkle with feta and chili powder. Drizzle with lime cream. Garnish with cilantro.
Serve with fresh tortillas, salsa and guacamole.
