|1 Tbsp. olive oil
1 (283g) package baby spinach
2 cups grape tomatoes
6 large eggs, lightly beaten
1 package Green Giant* Veggie Tots Cauliflower Tots, cooked according to package directions
½ cup crumbled feta (optional)
Heat olive oil in large non-stick skillet over medium heat and cook spinach 5 minutes or until wilted. Remove and keep warm.
Add tomatoes to same skillet and cook 5 minutes or until beginning to burst, shaking skillet occasionally. Remove and keep warm.
Add eggs to same skillet and cook to desired doneness, stirring occasionally.
Arrange Green Giant* Cauliflower Tots in 4 bowls. Divide eggs, spinach and tomato into bowls. Sprinkle with cheese and drizzle with sriracha, if desired.
