Preheat oven to 400°F. Butter an 8 x 11in pan with 1 tbsp. Leave extra bits of butter in the bottom of the pan.
In a medium sauté pan over medium high heat, add olive oil, onions and ham, cook for 5 minutes. In the last 1 minute of cooking add spinach to pan. Remove from heat.
In a large bowl, add the ham mixture, zucchini, peas, feta, flour and half of the chives. Stir until fully combined.
In a separate bowl, whisk eggs with cream. Fold into vegetables and ham mixture until fully combined. Pour mixture into buttered pan. Spoon ricotta over top and sprinkle with remaining chives. Bake for 30 minutes until puffed and edges are golden brown. Serve with a side of fruit.
