1 pkg. (340 g) Green Giant* frozen Broccoli & Cheese Veggie Tots
1 cup (250 mL) thick bacon, chopped
4 eggs, soft cooked
1 tbsp. (15 mL) parsley
1 tsp. (5 mL) chili flakes
2 tbsp. (30 mL) olive oil
¼ tsp. (1 mL) pepper
1 tbsp. (15 mL) chives, chopped
¼ cup (60 mL) shaved cheddar cheese
Handful watercress leaves for garnish
Preheat oven to 425°F. In a small bowl whisk together olive oil, parsley and chili flakes and pepper and set aside.
Scatter broccoli tots and bacon into a 9 x13 non-stick pan. Bake for 25-30 minutes until bacon and tots are golden brown. Flip tots and bacon after 15 minutes during cooking.
Remove pan from oven. Transfer tots and bacon to a serving platter. Slice soft cooked eggs into halves and arrange on the platter. Drizzle with herb oil. Garnish with chives, shaved cheddar cheese and watercress leaves. Serve family style.
