Prepare Riced Veggies Lime Cilantro Blend as directed on pack. Meanwhile whisk eggs in a medium bowl and add 1 ½ cups shredded cheese and salt. Add Veggie Blends and stir to combine.
Heat a nonstick pan over medium heat. Add ¼ cup of Veggie Blend and spread into a pancake. Depending on size of pan, repeat with 1-2 additional pancakes. Cook on one side until lightly browned and crispy, 2-3 minutes, flip and cook other side.
Remove from pan, sprinkle with 2 Tbsp. black beans and sprinkle with 1 Tbsp. shredded cheese. Microwave for 30 seconds.
To serve, arrange toppings on top of melted cheese. Makes 6-8 pancakes
