ONE-SKILLET CAULIFLOWER TOTS CHILI Recipe

Ingredients

ONE-SKILLET CAULIFLOWER TOTS CHILI

  • 1 bag (400 g) Green Giant* frozen Valley Selections* Essentials Asian Mixed Vegetables, thawed
  • 1 bag (454 g) frozen Green Giant* frozen Cauliflower Veggie Tots
  • 2 tbsp. (30 ml) olive oil
  • 1 cup (250 ml) cooking onion, finely diced
  • 3 cloves of garlic, minced
  • 1 lb ground plant-based protein
  • ¼ tsp. (1 ml) salt
  • 1 cup (250 ml) frozen Green Giant* Sweetlets* Peas
  • 2 tbsp. (30 ml) chili powder
  • 2 tsp. (10 ml) smoked paprika
  • 1 tbsp. (15 ml) dried oregano
  • 1 can (796 mL) diced tomatoes
  • ¼ cup (60 ml) Chili in adobo sauce
  • 1 cup (250 ml) shredded vegan cheese
  • Green onion, chopped for garnish
  • Cilantro, chopped for garnish

Directions

Preheat oven to 425°F.

In a large oven safe skillet or large cast iron skillet over medium high heat, add oil, onion, garlic, meat and salt. Cook for 8 minutes, until onions and meat are lightly browned.

Remove from heat and stir in Asian mixed vegetables, peas, chili powder, paprika, oregano, tomatoes, and adobo chilis. Arrange cauliflower tots over chili. Place the skillet in the oven and cook for 20 minutes. After 20 minutes sprinkle tots with cheese and return to oven to cook for another 5 minutes until cheese has melted. Garnish with chopped green onions and cilantro.
