Stuffed Peppers

1 pkg (340 g) Green Giant* Riced Veggies Cauliflower & Sweet Potato

1 lb (500 g) ground turkey or chicken

1 small onion, chopped

2 cloves garlic, minced

½ tsp (2 ½ mL) salt

1 ½ cups (355 mL) shredded mozzarella cheese, divided

1 (398 mL) can tomato sauce

2 tbsp (30 mL) grated Parmesan cheese

½ tsp (2 ½ mL) Italian seasoning

4 medium red or green bell peppers, halved lengthwise and seeded



Preheat oven to 375°F (190°C). Cook turkey, Green Giant* Riced Veggies Cauliflower & Sweet Potato, onion, garlic and salt in a large nonstick skillet over medium-high heat 10 minutes, stirring occasionally, until turkey is no longer pink and vegetables are tender. Stir in 1 cup (235 mL) mozzarella, 1 cup (235 mL) tomato sauce, Parmesan cheese and Italian seasoning.

Arrange pepper halves in 3-quart (2.8L) baking dish. Evenly fill peppers with turkey mixture. Top each pepper with remaining sauce. Cover and bake 25 minutes or until hot. Remove cover, sprinkle with remaining mozzarella and bake 5 minutes or until cheese is melted.
