Chicken and Zucchini Zoodle Soup Recipe

Chicken and Zucchini Zoodle Soup

  • 2 tablespoons butter
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 stalk celery, diced (about ½ cup)
  • 1 carrot, diced (about ½ cup)
  • ½ cup diced red onion
  • 1 clove garlic, chopped
  • 4 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (12 oz.) package Green Giant* Spirals Zucchini, cooked according to package directions and drained
  • ¼ cup chopped fresh parsley


Heat butter in 4-litre saucepan over medium heat.  Add chicken and cook, stirring occasionally, 5 minutes or until beginning to brown.

Add celery, carrot, onion, and garlic and cook 5 minutes or until vegetables are softened.

Add broth, salt and pepper and simmer 10 minutes.  Stir in Green Giant* Zucchini Spirals and parsley and cook 1 minute or until heated through.
