Chilli Bean Salad

½ cup (125 mL) balsamic vinaigrette dressing

2 tsp (10 mL) chili powder

1 tsp (5 mL) ground cumin

1 pkg (300 g) Green Giant* Valley Selections* Lima Beans

1 cup (250 mL) black beans, drained, rinsed

¾ cup (175 mL) Green Giant* Frozen Niblets Whole Kernel Corn

½ cup (125 mL) chopped tomatoes

2 tbsp (25 mL) chopped red onion

½ cup (125 mL) avocado (optional)

Chopped fresh cilantro (optional)


Combine salad dressing, chili powder and cumin. Cook lima beans and corn 2 minutes in boiling water; drain, rinse under cold water. Combine lima beans, black beans, corn, tomatoes, red onion and avocado (if using). Pour dressing over salad and gently toss. Sprinkle with cilantro, if desired. Let stand 1 hour before serving to blend flavours.
