1 pkg. (340 g) Green Giant* Veggie Spirals Zucchini, thawed
1 pkg. (340 g) Green Giant* Veggie Spirals Butternut Squash, thawed
½ cup (125 mL) feta cheese
2 tbsp (30 mL) lemon juice
1 tbsp (15 mL) lemon zest
1 tbsp (15 mL) olive oil
2 tbsp (30 mL) plain Greek yogurt
1 egg, lightly beaten
¼ tsp (1 mL) ground black pepper
1 tbsp (15 mL) each fresh mint and parsley, finely chopped
3 tbsp (45 mL) all purpose flour
2 green onions, chopped
¼ cup (60 mL) vegetable oil
In a small food processor, whip feta, olive oil, yogurt, lemon zest and juice until just combined. Set aside.
In a medium sized bowl stir together egg, pepper, mint, parsley, flour and green onion. Strain thawed veggie spirals removing any excess liquid and gently fold into egg mixture. Form noodles into 8 equal 3-inch round patties, each roughly ½ inch thick.
In a skillet over medium high heat, add 2 tbsp (30 mL) vegetable oil and sear 3 patties for 4 minutes on either side. Repeat with remaining patties and vegetable oil.
Serve warm with whipped feta spread and a side salad.
